Cucumber Noodle Greek Salad

Ingredients
  • 2 large cucumbers
  • 1 pint grape tomatoes halved
  • 1 medium red onion chopped
  • 1 can black olives sliced
  • 1 green pepper chopped
  • 1 cup banana peppers chopped
  • greek dressing to taste
  • spinach optional
Instructions
  1. Cut the cucumber into quarters.

  2. Secure the spiralizer to the counter, then spiralize each section of the cucumber. Add to a large mixing bowl (cutting any super long noodles if needed).

  3. Chop your vegetables and add to the bowl.

  4. Pour the dressing over the veggies and toss to coat.

  5. *Optional - top on top of spinach

  6. Serve immediately or store in the fridge for up to 4 – 5 days.
