This Restaurant Style Mexican Rice Recipe is full of flavor! It goes great with your favorite Mexican dishes or as a main dish in itself.

Is it Spanish Rice or Mexican?  I have no idea.  According to some, Spanish Rice does not have cumin but this recipe does so I am going with Mexican Rice.  Honestly, this recipe should be called BETTER THAN Restaurant Style Mexican Rice Recipe.  I don’t know about you, but Mexican Rice at restaurants can sometimes lack flavor which is incredibly disappointing.

But not this Mexican Rice recipe my friends!  It is seriously full of flavor and I think you’re going to LOVE it. My family sure did!  I’ll go ahead and tell you that this Mexican Rice recipe has Rotel in it, so you know it’s going to be good!  I used the original for this recipe, but you can go for the mild if you prefer.

You’ll be surprised at just how easy this Restaurant Style Mexican Rice Recipe is to make.

First Saute

In a large skillet over medium heat, you’ll melt your butter (or olive oil) and add your chopped onion, minced garlic and rice.  Saute until the onion are tender and the rice is turning brown.

Then Simmer

Add the chicken broth and can of Rotel or any other diced tomato & green chili blend.  Add your chili powder, salt and cumin and stir.  Bring to a boil then cover and simmer on low for 30 minutes or until the liquid is gone.  If you prefer to use brown rice, cook for 40 minutes instead of 30.

Restaurant Style Mexican Rice

This Restaurant Style Mexican Rice Recipe is easy to make and full of flavor.  Serve it with your favorite Mexican dishes or enjoy as a main dish!

Ingredients
  • 2 tbsp butter (or olive oil)
  • 1 onion chopped
  • 1 large garlic clove minced
  • 1 cup long white rice uncooked
  • 2 cups chicken broth
  • 1 (10 oz) can diced tomatoes with green chilies (with juices) I use Rotel original
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/8 tsp cumin
Instructions
  1. In a large skillet over medium heat, melt your butter and add the onion, garlic and rice.  Saute until the onions are tender and the rice is golden brown.

  2. Add the chicken broth, diced tomatoes & green chilis, chili powder, salt and cumin and stir.  Bring to a bowl then cover and simmer on low for 30 minutes or until the liquid is gone.

  1. I had always wondered what the difference between spanish and mexican rice was. I love how simple and flavorful this recipe looks. Sadly, I’ve always grabbed some box of spanish rice in the grocery store, but I definitely think I can handle this instead!
